Oatmeal Cake

Oven 350.
Combine and let stand at least 20 minutes:

1 cup old fashioned rolled oats
1 1/2 cup boiling water

Cream together:

1/2 cup butter
1 cup sugar
1 cup packed brown sugar

Add, mixing thoroughly:

2 eggs
2 tsp. vanilla
and the oat mixture.

Sift together:

1 1/3 cup all-purpose flour
1 tsp. baking powder
1/2 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg

1.) Sift the flour mixture into the egg mixture.
2.) Beat about 2 minutes, then turn into a greased cake pan and bake 30 minutes or until toothpick is inserted in the middle and comes out clean or dry.
3.) Ice the cake with broiled icing, whipped cream, or cream cheese frosting.

Suggested variation: Add 2 cups softened raisins and 2 cups chopped pecans
